Mango Butter

Makes 1 lb.

1 Mango, peeled and separated from pit
1/2 cup water
1/6 cup sugar
1 lb. whole butter, soft
dash of cinnamon

Cook mango half, sugar,and water until reduced by 3/4 amount. Let cool. Place butter in mixer, mix on medium speed. Slowly add mango puree. Whip on high speed 4 minutes, until butter is fluffy.
