Yellowtail is probably the best fish in the Keys. Sweet, delicate, and very mild, it is not good for grilling because it is so flaky and delicate, but is superb in the many Keys dishes that combine it with lemon or fruits. It is at its best broiled with some seasonings and some lime. |
