Grouper Fillets
A firm, sweet tasting fish, grouper are considered by many to be some of the best the Keys have to offer. This fish is great no matter how you fix it.
Grouper can be scarce certain times of the year so grouper is subject to availability

Yellowtail Snapper Fillet
Yellowtail snapper fillet is probably the best fish in the Keys. Sweet, delicate, and very mild, it is not good for grilling because it is so flaky and delicate, but is superb in the many Keys dishes that combine it with lemon, dill or fruits. It is at its best broiled or fried with some seasonings and lime.
